Ingredients

For the Dough

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water
  • 1 tablespoon sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

For the Filling

  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup marinara sauce
  • Salt and pepper to taste
  • 2 tablespoons nutritional yeast (optional, for topping)

Instructions

  1. In a small bowl, mix the yeast with the warm water and sugar. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil. Knead into a smooth dough for about 8–10 minutes. Cover and let rise for 1 hour.
  3. Meanwhile, heat the olive oil in a pan over medium-low heat. Add the onions and cook, stirring occasionally, for 15–20 minutes until golden and caramelized.
  4. Add the garlic, spinach, oregano, and red pepper flakes. Cook for 2–3 more minutes until spinach is wilted. Season with salt and pepper. Let cool.
  5. Preheat oven to 375°F (190°C). Grease a baking dish.
  6. Roll out the dough into a rectangle on a floured surface. Spread marinara evenly over dough. Top with the spinach-onion mixture.
  7. Roll the dough tightly from the long side into a log. Slice into 10–12 rolls and place in the baking dish.
  8. Sprinkle with nutritional yeast if using. Bake for 25–30 minutes until puffed and golden.
  9. Let cool slightly before serving.

  • For a crispier bottom, place the rolls on a parchment-lined baking sheet instead of a dish.
